Hello Punkin!

With fall approaching, I am loving filling my house with the scent of cinnamon, allspice and pumpkin! I am loving boots, layering cozy sweaters and sipping on warm tea at night, and I decided to make a yummy treat to compliment all this fall inspiration! This only takes about 10 minutes to throw together, and only needs to cook for about 15-20 minutes.

Wet Ingredients

  • 2 cups pumpkin puree NOT pumpkin pie filling - too much sugar
  • 3-4 large eggs
  • 1 tsp. vanilla extracts (pure form - not simulated stuff)
  • 1 heaping Tbsp. virgin coconut oil

Dry Ingredients

  • 2 cups almond meal (ground almonds)
  • 1 Tbsp. baking powder
  • 2-3 Tbsps. cinnamon (or pumpkin-pie spice)
  • 1 scoop of BeautyVegan Natural Vanilla protein powder (or BeautyWhey flavor of your choice)

Instructions

  1. Mix wet and dry ingredients separately.
  2. Add the dry ingredients into the wet until fully blended.
  3. Spoon mixture into non-stick mini muffin trays.
  4. Bake at 350 degrees Fahrenheit for approx. 10-15 min (when toothpick comes out dry).

**If you feel the mixture is too dry you can add a couple of egg whites, and inversely, if you feel the mixture is too wet you can add some more protein powder or almond meal.

Yield- 30-35 mini-muffins (3 per serving size)
