With fall approaching, I am loving filling my house with the scent of cinnamon, allspice and pumpkin! I am loving boots, layering cozy sweaters and sipping on warm tea at night, and I decided to make a yummy treat to compliment all this fall inspiration! This only takes about 10 minutes to throw together, and only needs to cook for about 15-20 minutes.
Wet Ingredients
- 2 cups pumpkin puree NOT pumpkin pie filling - too much sugar
- 3-4 large eggs
- 1 tsp. vanilla extracts (pure form - not simulated stuff)
- 1 heaping Tbsp. virgin coconut oil
Dry Ingredients
- 2 cups almond meal (ground almonds)
- 1 Tbsp. baking powder
- 2-3 Tbsps. cinnamon (or pumpkin-pie spice)
- 1 scoop of BeautyVegan Natural Vanilla protein powder (or BeautyWhey flavor of your choice)
Instructions
- Mix wet and dry ingredients separately.
- Add the dry ingredients into the wet until fully blended.
- Spoon mixture into non-stick mini muffin trays.
- Bake at 350 degrees Fahrenheit for approx. 10-15 min (when toothpick comes out dry).
**If you feel the mixture is too dry you can add a couple of egg whites, and inversely, if you feel the mixture is too wet you can add some more protein powder or almond meal.
Yield- 30-35 mini-muffins (3 per serving size)
