It’s summertime and enjoying a nice cool salad with some crunch is something many of us look forward to. What makes this salad even better is that it’s packed with nutrient rich superfoods that have numerous health benefits. This superfood salad contains leafy greens, berries, healthy fats, and is packed with tons of flavor too.
What makes this summertime salad even better is that it’s great as a packed lunch and hearty enough to fill you up at dinner.
Ingredients
- 3 cups kale stems removed and finely chopped
- 1 TB Lemon or Lime Juice
- 1/2 cup Blueberries, fresh
- 1/2 Avocado, sliced
- 4 oz. Cooked Salmon (prepared to your liking, I find that searing for a light crust on it is best)
- 2 TB Sunflower Seeds
Dressing
- 1 cup Blueberries, fresh
- 1/3 c. Olive Oil
- 1 TB Lemon Juice
- 1/4 c. Balsamic Vinegar
- 2 TB Honey OR Agave
- 2 TB Water
- Salt & Pepper to taste
